The Story
In the Central Valley of Costa Rica, tucked along the fertile slopes of the Poás Volcano, the Chacón family operates the Las Lajas bio-mill with a profound respect for the land. As pioneers in organic coffee production and masters of precise, water-saving honey and natural processing methods, they treat coffee cultivation as a fine art.
We visited Oscar and Francisca Chacón at their estate to see this dedication firsthand. Las Lajas relies on meticulous canopy shade, volcanic soil, and closely guarded drying techniques that bring out extraordinary sweetness and complex fruit notes. This exceptional lot reflects a shared commitment to sustainability, exceptional quality, and the deep relationships that bridge the farm to your morning cup.
